Breakfast in a Jar For Busy Entrepreneurs on the Go

I don't know about you, but I work best in the mornings; I curl up on the sofa with my blanket and laptop as the sun rises over our pretty birch trees and our resident family of turkeys stroll by. It's peaceful and quiet...until my tummy starts rumbling and grumbling.

 

My wake up call is about 5:30, and I only have about 30 minutes before my husband is up and looking for his coffee. By the time he heads out the door, I'm left with about an hour (90 minutes if I'm lucky) before the munchkin wakes up. So while I'm super productive in that time...time is something I'm a little short on. Which means my ideal breakfast is a grab - n - go.

 

The solution? Overnight oats...in a jar. Pre-portioned beauties prepped the night before and all ready to go when I wake up, and the topping choices are nearly endless so it's easy to switch up the flavors. This recipe is a particular favorite combination of mine: Maple, Brown Sugar, and Cinnamon! Yumm...

INGREDIENTS

 

1 cup rolled oats (gluten-free oats work well too, if you so desire)

.5 tsp vanilla

1 cup milk (I use whole milk, but you can also use almond milk)

1.5 tbsp brown sugar

¼ tsp cinnamon

1.5 tbsp pure maple syrup

Top with pecans coarsely chopped, toasted (optional)

 

INSTRUCTIONS
  1. Add the oats, vanilla and milk to a 12 - 16 oz mason jar and stir to mix well.

  2. In a small bowl, combine brown sugar, cinnamon and maple syrup. Pour over the oats and stir to combine.

  3. Refrigerate jars overnight (or at least 2 hours but who has 2 hours before breakfast?)

  4. If your using pecans, toast toast them at 325 degrees for 5-7 minutes then sprinkle over top. I usually skip the pecans and add a little extra maple syrup!

Notes:

 

If you're using a newer mason jar that is microwave safe, you can warm up your oatmeal in the microwave about 45 - 60 seconds. We don't have a microwave, though, so I just eat mine cold!

 

Also, this technically makes 2 servings, so you could either cover your leftovers and put them in the fridge, or divide the portions into 2 smaller jars.
